- 250 g (1/4 liter) water
- 140 g flour
- 110 g butter
- pinches of salt and sugar
- up to five eggs
- Preheat oven to 350 degrees.
- Put water, butter, flour, salt, and sugar in a pot over heat. As soon as it boils, remove from heat, add in all flour at once and stir.
- Return to heat and mix continuously until the dough pulls away from the walls. This helps to dry out the dough.
- Transfer the dough to a mixing bowl, mix in one egg at a time ensuring complete incorporation before adding the next. The dough should be thick and keep its shape when piped.
- Either use a pastry bag or use teaspoons to transfer dough onto parchment-lined cookie sheets. Dough will expand, so leave a little space between each dough ball. Put into the oven until uniformally golden-brown. Reduce heat in oven to 300 degrees for five minutes for the balls to dry out. They’re done when they feel light and hollow.
