Limeade

  • Five or six limes (to yield 1c lime juice)
  • 1.5 c water
  • 1.5 c white sugar
  1. Juice all limes to yield 1 c lime juice. Strain the juice into a large bowl.
  2. In saucepan with medium-high heat, dissolve sugar and water together until mixture is clear. Do not let it come to a rolling boil.
  3. Combine simple syrup into lime juice to produce concentrate. 
  4. Serve over ice, using two parts liquid to one part concentrate.
  5. Alternate adjustments: use 1 part lime concentrate, 1 part club soda, and 1 part rum, serve over ice.
