- Five or six limes (to yield 1c lime juice)
- 1.5 c water
- 1.5 c white sugar
- Juice all limes to yield 1 c lime juice. Strain the juice into a large bowl.
- In saucepan with medium-high heat, dissolve sugar and water together until mixture is clear. Do not let it come to a rolling boil.
- Combine simple syrup into lime juice to produce concentrate.
- Serve over ice, using two parts liquid to one part concentrate.
- Alternate adjustments: use 1 part lime concentrate, 1 part club soda, and 1 part rum, serve over ice.
