- 8 oz uncooked elbow macaroni
- 8 oz sour cream
- 12 oz small curd cottage cheese
- 2 cups shredded cheddar
- 1 cup shredded ghouda (purely optional)
- 1 tbsp butter, melted
- 1 cup bread crumbs
- Chipotle-based hot sauce (optional)
- salt and pepper
- Preheat oven to 350 degrees.
- Cook pasta according to package directions. Drain, combine in ungreased casserole or 9×13 baking dish with sour cream, cheeses, and cottage cheese. Season with optional salt and pepper to taste. Spread evenly.
- In a small bowl, mix breadcrumbs with melted butter until well combined. Sprinkle on top of mixture.
- Bake in oven for 30-40 minutes until crust is golden-brown. Remove and let set for 5 minutes before serving. Serve with optional hot sauce to dash on.
Tip: Mixing 1/4 cup of grated parmesan cheese with the breadcrumbs before sprinkling breadcrumbs will give a slghtly cheesier taste.
