Scallops with Escargot Butter

  • 1 lbs scallops, cleaned 
  • 4 tbsp butter, softened
  • 2 tbsp fresh parsley
  • 2-4 cloves garlic (more to taste)
  1. Preheat oven to 450 degrees F.
  2. Cut scallops into quarters, set aside.
  3. Mince the garlic, mince the parsley and and mix in bowl with butter until well integrated. Season with salt and pepper to taste.
  4. Set scallops into two personal-sized casserole ramekins. Dollop butter mixture evenly over the scallops. Place into oven for 5-8 minutes, or until edges of scallops become opaque white. Serve!
